“Starting your own business is tough and takes a lot of time, I’m here at 6.15am and then I get home about 7pm. But you never heard of a successful person who said that at the start it was all easy!"

“I’ve always loved cooking and I wanted to open a cafe that just made really good, quality homemade food. I wanted to be my own boss and work for myself. I’d never done anything like this before and I’ve been open nearly two years and there is massive amount to learn.

“Starting your own business is tough and takes a lot of time, I’m here at 6.15am and then I get home about 7pm. But you never heard of a successful person who said that at the start it was all easy!

“I buy the best ingredients I can. I want the food to be quality and you get what you pay for. I can’t make everything myself, I’d love to be able to, but I can’t and so that’s why I don’t mind spending a bit more money to guarantee I am getting the best ingredients possible.

“All my bread is from Moor Bakery, in Staveley, chutneys from the famous Hawkshead Relish and coffee from Red Bank Roasters, in Coniston. I get my lamb from my mum, Esther, who’s a shepherd.

“You have to constantly be coming up with good ideas. It’s tough, but when you do do something and it goes really well and everyone endorses it, it feels brilliant. Every day we come up with a new menu and a new selection of dishes. I want to inspire people to eat a little better.

“When I am not working here, I just want to be out in the fells with my dogs Laurie and Sam. They’re like my kids, I love them and I love getting outdoors with them as much as I can. My mum is a shepherd and she spends lambing time living in a yurt up behind Staveley and that’s just the kind of background I was born into. I can’t imagine living anywhere else.”
